White Peach and Prosciutto Salad

White Peach and Prosciutto Salad relies on premium produce. Simple quality ingredients married together is all this delicious salad needs. This is a salad that we make throughout the stone fruit season when sweet juicy peaches and nectarines are in peak season.

The salty prosciutto marries perfectly with the sweetness of the peaches, and the peppery baby rocket brings its own welcome addition to this simple but stunning, tasting salad. Add some rich vincotto dressing to the rocket leaves and you’ve got a party of four ingredients that were made for each other.

Perfect as a starter or table salad

White peach salad with prosciutto, rocket and caramelised vinegar makes for a quick, elegant starter or make up a huge platter of them for your next barbeque and watch them go.

Peaches

We love white peaches. Their flavour is superb, luscious , juicy and sweeter than yellow peaches, with a light creamy flesh. They are also lower in acid than yellow peaches so the natural sugar comes through in their flavour. Ditto for white nectarines.

Prosciutto

Avoid pre packaged and sliced prosciutto and have it hand cut at your local deli. Packet prosciutto works out far more expensive than having it sliced for you. The meat is delicious, salty and very flavourful. It pairs beautifully with white peaches.

Vincotto balsamic dressing

Vincotto balsamic is worth seeking out if you don’t know it. It can be infused with citrus and has a deep colour and caramel flavour. Our favourite is made locally in Jen’s village and is infused with orange. Big shout out to Pomodora’s of Maleny, Queensland for their stunning orange vincotto product. It is made with orange zest and port, perfect for this salad. Vincotto marries beautifully with baby rocket leaves with their peppery flavour.

White Peach and Prosciutto Salad

This is not so much a recipe as a collection of prime ingredients marrying up. Ingredients at their prime is what this salad is all about. Perfect juicy prime season peaches, Italian prosciutto thinly sliced, peppery crisp rocket leaves and a deep caramel vincotto. Simple but stunning!

Ingredients

  • ripe white peaches
  • thinly sliced prosciutto
  • fresh, crisp peppery baby rocket leaves
  • vincotto dressing
  • salt flakes and freshly ground black pepper

Instructions

  • in a bowl dress chilled and washed baby rocket leaves with vincotto, salt flakes and freshly ground pepper
  • cut and slice peaches and wrap with proscuitto slices
  • place dressed rocket on a platter and place peach and prosciutto slices around
  • sprinkle with salt flakes and freshly ground black pepper
  • serve and enjoy!
