Vegetable chilli is perfect for cold days when you just don’t want to go out and shop. Instead we’d rather put a big pot of chilli on, chill out on the lounge and watch a movie. This smoky vegetable based chilli with beans and chickpeas adding loads of fibre is a real crowd pleaser. Quick, cheap and delicious!

Best of all the recipe is incredibly versatile as you can use whatever veggies you have in the fridge, or swap out the beans for other types.

It’s a great dish to serve to friends for a casual get together. Use it as a dip with corn chips or fill tortillas topped with sour cream and guacamole. Or better still layer it up with corn chips for a delicious nachos.

Layering the chilli with fresh chilli, smoked paprika and tabasco adds great flavour. Ready in 30 minutes. What’s not to like?

Vegetable Chilli

Vegetable chilli is full of goodness and loaded with vegetables. It has a smoky, mild chilli  flavour, increase the chilli if you fancy it hotter.


  • 3 tablespoon vegetable oil
  • 2 medium red onions, diced
  • 4  fat cloves of garlic
  • 1 large carrot, diced
  •  400g (14 ounce) tin red kidney beans drained
  • 400g (14 ounce) tin diced tomatoes
  • 1 red chilli, finely sliced
  • 1 medium zucchini, diced
  • 400g (14 ounce) tin of chickpeas
  • 400g (14 ounce) tin of corn niblets, drained
  • 1 red capsicum (bell pepper) diced
  • 2 teaspoons sweet smoked paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 2 teaspoons Tabasco sauce
  • 3 tablespoons smoky barbecue sauce
  • 1/2 cup water
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • fresh lime juice


  • heat oil in a heavy based pan over medium heat
  • add onions, carrot, chilli and garlic and fry for 3-4 minutes till softened
  • now add capsicum and fry for a minute or two
  • add tomatoes, paprika, coriander, cumin, salt, sugar, tabasco and barbecue sauce giving it all a good stir
  • now add water and zucchini, stirring for a minute
  • add chickpeas, corn, kidney beans and bring to a boil
  • reduce heat and simmer for 20 minutes
  • serve and add sour cream, corn chips, avocado and fresh lime
  • enjoy!
