Thai Basil and Ginger Dressing is a delicious and punchy dressing that brings salads to life. We encountered this recipe through the famous Thai Spirit House restaurant in our neck of the woods. It originally was the dressing used for their  Roasted Sweet Potato, Avocado and Pickled Ginger Salad .  

The dressing is also fabulous with fresh ripe tomatoes, tossed through pasta salads or drizzled over fried halloumi cheese.

Lime juice

Lime juice in this dressing will lose its vibrancy, and taste a little flat in the dressing, if made too far ahead of using. As the dressing is made in minutes it is best that you make it just prior to dressing your salad.

Thai Basil and Ginger Dressing

Thai Basil and Ginger Dressing is a delicious and punchy dressing that brings salads to life. We encountered this recipe through the famous Thai Spirit House restaurant in our neck of the woods. It originally was the dressing used for their  Roasted Sweet Potato, Avocado and Pickled Ginger Salad .  

The dressing is also fabulous with fresh ripe tomatoes, tossed through pasta salads or drizzled over fried halloumi cheese.

Ingredients

  • 1 tablespoon fresh, chopped ginger
  • 2 cloves garlic, peeled
  • 1/2 cup of fresh basil leaves
  • 3 tablespoons freshly squeezed lime juice
  • 1 tablespoon white vinegar
  • 1 1/2 tablespoons soy sauce
  • 2 tablespoons chopped shallots (scallions)
  • 1 1/2 tablespoons brown sugar
  • 1/2 cup vegetable oil
  • salt and pepper to taste

Instructions

  • place all ingredients into a blender or food pro
  • blend till thoroughly combined
  • serve and enjoy!

Every night Cooper is curious about the magnificent, plump green tree frogs that live in the downpipes on the verandah. The frogs never seem bothered by his nose being edged ever closer to them. So cute!
