Salmon
Look for smoked salmon ‘offcutsʼ or ‘trimmingsʼ which are invariably sold for a third of the price of premium sliced salmon. Salmon offcuts are what we used to make this smoked salmon pate and because the cost is so cheap for a luxury fish we can afford to be extremely generous in the amount of salmon used.
Quick pickled cucumbers
Cucumbers that are ready in fifteen minutes are the perfect accompaniment for this pate. Thinly sliced then splashed with rice vinegar, salt and sugar they deliver a slight crunch and are a perfect pairing with the smoked salmon pate.

Smoked Salmon Pate - Gluten Free
Smoked salmon pate with pickled cucumber is so easy and delicious youʼll wonder why you donʼt make it more often. Throw everything in the food processor, blitz, then fold through some more salmon and gherkins and voila youʼre ready to party.
Ingredients
Smoked salmon pate
- 10 ounces (300 g) smoked salmon - see note
- 8 ounces (250 g ) cream cheese - see note
- 1/4 cup sour cream
- 1 medium red onion roughly chopped
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- bunch of chives finely sliced
- 3 tablespoons fresh dill
- 1/4 cup capers - rinsed
- 1 heaped teaspoon horseradish
- 2 teaspoons Tobasco sauce
- 1 tablespoon worstershire sauce
- 1/2 teaspoon fine white pepper
- 4-5 gherkins cut into small dice
Quick pickled cucumbers
- 2 lebanese cucumbers finely sliced
- 1/4 cup rice wine vinegar
- 1 tablespoon castor sugar
- 1/2 teaspoon salt
Instructions
Smoked salmon pate
- put cream cheese, sour cream, lemon zest, lemon juice, capers, chives, dill, horseradish, pepper into food processor bowl
- whizz till blended
- place mixture in a clean bowl and add chopped salmon, gherkins, Worcestershire , tabasco
- fold through pate
- serve and enjoy!
Quick pickled cucumbers
- finely slice cucumbers
- mix vinegar, sugar and salt together and stir until sugar and salt dissolve
- pour over cucumbers and toss every few minutes for 15 minutes
Notes
- try to buy the much, much cheaper smoked salmon offcuts or trimmings for economy for this pate
- don't use cream cheese that is 'softened' as it makes the pate too runny
