This is just the sort of dip we love to make for family and friends as it’s always popular, and smacks of summer with fresh prawns (shrimp). This dip is a favourite of ours for family gatherings. We like to picnic by the beach with everyone bringing a course to contribute to our family gathering.
Make this dip a day or two before serving and on the morning toast off the sourdough and allow to cool then bundle into a container along with a knife for serving.

Prawns
There are prawns, and prawns. When making Prawn coriander and sweet chilli dip, we like to use either good quality fresh or frozen prawns obviously the beauty of frozen prawns is you can have them in the freezer for whenever the need arises. The briny taste of the prawns really injects a lot of flavour into this dip. However, if you’re using frozen thawed prawns you need to check the saltiness and may well need to add a little salt to lift the prawn flavour.
